What kind of syrup do you like to use?

If I'm getting something from a bottle, usually maple. The last time I had pancakes, though, they were pumpkin ones, and instead of using maple syrup, I sauteed up some apples in butter and brown sugar with cinnamon, nutmeg, ground cloves, and a splash of brandy, and used that sauce as syrup (along with the apples themselves). That was some good ****.
