it's a classic mythological weakness of those sorts of beings

some fiction require you to go a step further by burning it, destroying the brain or heart, or using specific types of metals, but a classic vampire does not

Would depend on which type of vampire you consider canon, since there's hundreds of different interpretations.

Cutting the head off is a traditional method for preventing vampires from rising. It usually involves putting garlic in their mouth as well. Along with staking the heart and burying them face down.

If you are going by the Bram Stoker way to kill a vampire, then you need to decapitate them and stab/burn their heart.

Yeah, the original Bram Stoker Dracula did not require a wooden stake at all. He was capable of walking around during the day without use of his powers, and sunlight didn't kill him. But, if he laid down to rest during daytime in his coffin he was in a stupor and not able to act.

While he was paralyzed before sunset, the protagonists managed to decapitate him and stab him in the heart, and he just turned to dust.

The real question is would they also still die from sunlight in most vampire lore direct sunlight turns them to ash, but a highlander only dies from decapitation.

So would they just live as ash from that point on, die, or would they slowly regenerate?

yaknow, Highlander 2 is kinda underrated... I mean, it spits in the face of the continued lore but as a one and only sequel to Highlander it's not a bad idea; just coulda used better coaching on the actors

Firstly. as far as I know, neither vampires nor Immortals (from Highlander) actually exist
Secondly - the episode "the Vampire" from the Highlander TV series concerned an Immortal making his murders look like the work of a vampire - no actual vampire exists in any official Hightlander story.
So no definitive answer is possible.

While there are many versions of the vampire legend, they generally do involve the person dying and becoming an undead.
An immortal (such as in Highlander) can not be killed except by beheading so it should not be possible for one to become a vampire (unless it is a version of a vampire which can exist after beheading).

Being a vampire sucks. You lose all of your loved ones, become depressed, and one day just fall into a deep slumber for four hundred years. When you reawaken, you find that it's even harder to reconnect to society because culture has moved on to the point where nobody speaks your version of English anymore.

Being a Scottish vampire sucks even harder because you already speak a version of English nobody understands.
