I'm about as big a fan of the original lotr trilogy as you can be. I think by most metrics it's about as good an adaptation of the source material as you can hope for. I wasn't bothered by the removed content and I think many of the changes helped make the narrative more cohesive and compelling.
I got about five episodes into rings of power before I bailed. It just kinda sucks. And not for any reasons pertaining to adaptation changes.
