At-will employment basically invalidates claims against employers for stupid firings. Only if racial or discriminatory terminations can be proven (like terminating someone for being pregnant, which probably should have been the case for someone I worked with) can you do anything about it.
Otherwise you can get fired for shit if they feel like firing you. Personally I think that employer handbooks should be legally binding in a way but there's no way to get that legislated.
