I've lived in the US for over 15 years and can count on one hand the times I've been served roasted potatoes. Meanwhile baked potatoes are everywhere
Could totally be a regional thing though
Maybe. I've lived in the US for nearly 40 years, and roasted potatoes are served 3 nights a week here.

So, googling roasted potatoes shows me the little bite sized potatoes which I've had plenty of times, I was referring more to a larger potato that's skinned and roasted (which was pretty typical in the UK)
Sounds awful, to be honest, but okay. Does Google have pics/recipes for your roasted potato?

Aren't all the nutrients found in the skin though? Why remove it?

Only meaningful loss of nutrition is fiber by skinning your potatoes.
