I mean really depending on the game even Strength and Endurance won't get the full scoop. Sure, Strength lets you hit harder in melee--does it also increase your carrying capacity? Does it increase damage for thrown weapons? For bow and arrow weapons? Does it increase your grip duration? Your climbing speed?
Does Endurance just increase your base defense? Your maximum HP? Your poison resistance? Your elemental resistance? The rate your food/water/sleep meters decrease? Your sprint duration?
Most games will tell you the main thing it does, or maybe a couple. Few will tell you all.
Not the full scope, sure, but it is not at all unreasonable to expect that Strength will affect your melee damage and Endurance to affect your HP/survivability (they may affect other things, but these are the most consistent things to expect), and in most cases you will be correct on at least those things.
No other stat that I've come across has that level of consistency.
