Is there not a night auditor?I've done that job. There were plenty of difficult nights where things went wrong. I didn't have to set-up breakfast though. I had a decent management company. That's usually a sign of a cheap owner when they put stuff like breakfast, laundry, etc. onto front desk.
They are usually given all the busy work overnight because their job is so easy.
