It's fallout 4. Yeah, because there's no real right answer to bear the game.

The biggest hurdle would be convincing my mom to play over 60 hours of a game to beat it.

She has only ever really played Dr Mario and Candy Crush, but Rainbow Billy isn't exactly a difficult game. It's even got a mode to make the combat-puzzles easier, so she could probably do it.

It's a pretty easy game to just read h the credits on. I might have died twice on proud (hard) mode.

But I really don't think she's played a video game in 20 years, and that was a racer, for less than a minute, and I'm pretty sure that was the only time she's ever played anything.
There's a difference between canon and not-stupid.

My mom passed about 20 years ago and the only games she played were Mario bros 1 and 3, Dr Mario, and Tetris. Last game I played was Xenoblade 3. It's so far beyond the type of games she played I can't imagine it going well.

1) Is there a time limit?
2) Is she allowed to use guides, look stuff up, etc?
3) Am I allowed to offer advice/strategies/explain how to do things?
Bosses are immune to the eat command so it won't be possible to end the final boss fight of the game by eating it.

If you let me talk to her for 5 seconds then I'm sure she could beat the easiest difficulty in BBTAG. Combination of the game being really beginner friendly and the AI being dumb as bricks means that literally anyone who can just mash a single button can beat the story mode. Probably wouldn't even need to look at the screen; there's absolutely no challenge in beating fighting game AI.

Cyberpunk 2077. My mother had difficulty playing Mario Kart 64 as a kid. She's highly unlikely to beat Cyberpunk on any difficulty level.
