I'm at Hollow Bastion in KH1. Should I try to fight Sephiroth at least once? What's the recommended level against him?

The recommended level is whichever you learn Strike Raid at.

Sephiroth should be one of the last things you do. It would be very hard without Superglide.

This. There's 3 other superbosses that are weaker than him (in the base game, I haven't played any new versions), and they should really be challenged after you get to the end of the last world with Sephiroth being the last thing you fight before going on to beat the game

This is a legendary boss fight. The part where he starts running was one of the best "OH SHIT" moments in all of gaming. I did think it was weird that he was evidently gonna walk the whole time but I just sorta brushed it off as whatever until all the sudden I realized just how much hope I had subconsciously placed in that.

Yeah, Strike Raid, Once More and Second Chance are absolutely necessary for this fight.

You can squeak by without SR with enough practice timing a heal but SR is a lot more reliable.
There's a difference between canon and not-stupid.

Best fight in the game. One of my favorites period. Just gotta learn his attack patterns and when it's safe to go in on him.

I never really used it that way. I would go toe to toe with him.

But you do need a way to interrupt heartless angel, and Strike Raid was always my pick.
