You really don't need to brine it if you want to save time. I've never had issues with dry chicken. Just don't overcook it.

I HATE chicken

But if you wanna play it it even safer, I boil my chicken in water (add chicken broth if you want), minced garlic and a tablespoon of butter until its fully cooked

Dry it off and then bread it to fry in oil or throw in the oven

I've made parmesean chicken, chicken katsu and nori chicken like this before, and this way I only have to worry about the breading being properly done rather than the chicken being fully cooked

Nori/mochiko chicken is good stuff, and it's almost as simple as substituting the regular flour for the rice flour, wrapped in seaweed and then fried

If you want a simple way to cook chicken, just grill it in a pan.

Med-high heat, olive oil or unsalted butter in the pan, chicken seasoned on both sides with your favorite combo of seasoning, cook on eat side 7-8 mins. Cut into it to confirm cooked.

For baked chicken, I put it in a baking dish seasoned with a small pool of chicken broth. Oven at 350 for 35 mins

What's it taste like, it is white and looks perfectly cooked to me. Might be something weird with you marinating it for so long or whatever seasoning you used. Hell might just be the brand you bought. I always think those chicken breast's in their own little bags like that have an odd flavor.

Try grilling or baking it the way I mentioned in my last post and see how it works out for you. Those are the two ways I make chicken all the time.

probably because you left it in sus brine and then forgot about it. you know, just that one crucial step.

anyway good job, it looks like it's cooked the correct way. now you just need to work on seasoning and finding out what combinations work. also, skip the brine next time, you can get great tasting chicken without it.

Im sorry, I read the first 10 msgs and had to nope out after boiled chicken.

I had a roommate that used to cook like that, he also once made Kraft mac and cheese by putting the water, noodles, milk, margarine and cheese powder in a pot and then boiling the whole thing.

The roommate who wouldnt even microwave frozen meals and just ate ramen packs raw after sprinkling the seasoning packet on them had better taste.

If you have a charcoal grill, cook it indirectly until about 150 internal, and it will carry over to 160. If you pull it later, it will carryover until its overcooked.

I like dry brining with Diamond Crystal kosher salt and seasoning with a salt-free rub I mix up that has freshly ground black pepper, garlic powder, onion powder, smoked paprika, celery seed, and cayenne pepper if memory serves. I can post the exact proportions if you want.

It just tastes off, it's hard to explain. Tbh it's mostly flavorless, despite all the seasoning. I think it may have been the forgetting it was brining my my fridge for over a day >.>

I'll grill it next time, I do have another baggie of chicken breasts after all lol. I'll update this topic or make a new one cooking the next batch with a fresh new technique. NO ONE on ce is ready for my cooking masterclass

Couple simple things is cut it into small cubes like pieces and then pan fry over some heated oil. This is the quick way and will cook at a quick rate being smaller pieces. You can make rice on the side for a simple meal.

spinich stuffed chicken is a easy recipe worth looking into.

chicken and dumplings is literally boil chicken, then toss in tortilla shells to make dumplings. Then add in cream of chicken to thicken.

Pat dry with paper towels, trim off any skin / fat that hangs off as it will burn, then put them out in a pan skin side down. Brush with olive oil, the season with whatever you like (kosher salt, black pepper, and garlic powder minimum), then flip it over and do the same to the other side (if you want you can season under the skin too, but Im usually afraid of messing the skin up).

Bake at 375 on a charcoal grill (around 400 on the dome in my SnS Kamado) until the internal temp hits 180, then sear skin side and bottom for 30 seconds each over a hot fire.

If you dont have a grill, sear in a hot oiled skillet (preferably carbon steel, stainless steel, or cast iron), then cook in the oven at 375 until done.

In either case, it should take about an hour, and youre looking for an internal temperature of 180 to 185. Will beat the hell out of any breast youll ever have.

Never boil meat. Sous vide is good, boiling is terrible.

The big thing with chicken is you do need a LOT more seasoning than you would think. It tends to be a very bland meat unless it is heavily seasoned and a light seasoning actually makes it worse.

These 2 know what's up.
Though I'd like to add to PraetorXyn's post if you want your skin to be nice and crispy, just put some salt on the skin and leave it in the fridge overnight in order to extract moisture from the skin. Deboning is also preferable depending on what dish you're making.
And like they said, don't boil meat. You can do so for certain dishes like vol-au-vent or ramen, but never do so when you're just going to eat a piece of meat
