Because they're loaded with almost every feature possible and made by a smaller company that can't mass produce them in a way that would reduce the costs a bit. Just the nature of niche products.

Normal mechanical keyboards are already pretty expensive, and they use generic parts from the regular rectangular frames, PCBs, to mass produced keycaps. These ones have custom designed everything including the keycaps, to fit the unique shape.

There's also the Ergodox EZ. I have an older Ergodox I got as a kit from Massdrop back in the day.

These two use normal MX style switches, so if you like low profile switches better that's something to keep in mind.
