I think it was actually a trilogy of movies they were going to make. They got fired i believe from that, when Disney saw how they handled the last season of game of thrones, which they ironically rushed through to get to the star wars movies. Maybe if they hadn't fumbled game of thrones, they would have got their trilogy
The problem was the material was already written as the ASOiF books. When that ran out which was middle of season 6 is when the decline started. Now you might say didnt George give them a outline? You would be correct. What we got was likely the real ending. Remember they cut whole storylines out(

.So those are likely to be ended long before the finale in the books happens. What we got is what we got and most likely thats all we will get.
Now in a right world here is how I would handled those last seasons. Have George write it. I'll explain, way back before he starting writing ASOIF he was a tv screen writer. Beauty and the beast if my memory serves right. So he can write in a tv format. If you squint at the books the pov chapters function as episodes. This would have freed up DND to go do their SW thing and George to at least put a official cap on his story.
