Given that I was going to get a 2070s, should I just get the 3070 instead? I have no idea how much the 2070s price is expected to drop.

Are preorders a thing for graphics cards? Probably not, right?They are. Nobody knows when exactly they're going live though, and once they do these things are going to be instantly out of stock probably into next year, lol.
Personally I'd double the size of the SSD and skip the HDD, especially since games requiring SSDs are becoming a thing and will probably be the norm from next year on, due to the PS5 and XSX releases.

So it turns out there's been a PSU shortage this year due to coronavirus disrupting supply chains and a lot of the components being made in China.Also, your PSU is pretty overkill for your unit unless you plan to dualfire or something.
The PSU I was planning to get is the Corsair HX850-- not sure if I should just wait and hope it's back in stock this month or just try for something else.
I'm a cheapskate so I'll be buying a 3070 when I see one on sale.This is my plan as well
