I have two instant pots, the smaller one is just used as a rice cooker, but occasionally we slow cook in the larger one. I'm not a huge fan of the whole slow cooking stuff but my girlfriend loves roast with potatoes and carrots and there's really no easier way to do that. Lately I've been working with/through J. Kenji Lopez Alt's The Wok. I have a carbon steel wok that has been a fun change up from the cast iron and stainless steel I've been using for years
