Because they do. When a 16 year old dates a 30+ year old, or even a 25 year old, that's not just an age gap, that's a hugely imbalanced dynamic of power.

That's not so much a common interest as it is a topic of conversation. Maybe it reveals a common interest, but I find that less likely among high schoolers who work at the grocery store or the amusement park.

Why would they share a common interest? I don't necessarily share a common interest with every other employed person in the world beyond making enough money to live. That's about one level of nuance above "being alive life". Unless a 25+ year old is working the same job that might employ 16 year olds and... Yeah.

Yeah, and guys can sign on to kill and be killed in foreign foreign countries before they can drink. Being old enough to work is really of no significance here.

And yes, maturity doesn't inherently align with age, but I find that usually manifests in the immaturity of people who should no better, not the other way around. We've all heard or even know about 16-18 year olds who are extremely mature for their age, but 9 times out of 10, that's not the person you're dating.
