Any modern Arc System Works game from Guilty Gear Xrd to STRIVE, presumably. STRIVE being the most recent entry, you might wanna start there.

I'd also recommend FighterZ among that pack, the controls feel a bit simple compared to a Tekken or Mortal Kombat but it's so much fun and there's so much love and effort put into that game.

FighterZ actually has a lot of creative depth and ways to be played, clayton chapman on youtube basically found most of the tech people use nowadays and he still thinks there is undiscovered stuff.

Not sure about Tekken but the recent MK11 is pretty bare bones. What you see now is pretty much what the game was at launch.
