I mean, what's the point of fried cheese curds? Cheese curds on poutine are supposed to be melted and gooey with gravy. Frying them beforehand just ruins any sort of complexity to it.

And I totally agree with you. The heresy is whatever is shown on the picture. It's not poutine. There is a large variety of poutines. Renowned chef Martin Picard serves foie gras poutine in his restaurant (it's amazing). But poutine without melted cheese curds is not poutine. It's like a hot dog without a sausage.
