This is basically how it works with beef. All the bacteria/microbes stays on the outside of steak. So a quick seer of the steak makes it edible even if the inside is still blue and cold.

Raw meat requires a lot of energy to digest.

This is not true and not the issue. The concern is pathogenicity of microorganisms in raw vs. uncooked.

Raw meat contains more energy, but it is more difficult to extract. Cooked meat contains less energy, but it is more readily accessible. This is absolutely a fact. Anybody who told you otherwise is either stupid or lying to you.

Add to that the fact that if we wanted to eat raw meat safely, we would require much more harsh conditions in our digestive tract (stronger acids and things of that nature) to counteract the parasites and bacteria. Which is, once again, very "expensive" in terms of energy and nutrient consumption to keep up.

In the end, it comes down to energy efficiency. It's more efficient to eat cooked meat than to eat raw meat. If you can get a certain amount of nutrition from raw meat and it takes a certain amount of energy to extract it, while you could get half the nutrition from that meat if you cook it first and it would only take 20% of the energy to extract that nutrition, then you're better off cooking the meat. Because for the same amount of energy input, you would get 2.5x the amount of nutrition output. That surplus energy allowed us to develop a larger brain and higher intelligence.

It should also be noted that we did not evolve from carnivores. We never were carnivores so it's not like we had to "un-develop" the extreme digestive tract that creatures like vultures have.
