All they need to fix it is an end game where you have an unbreakable weapon of each type

Not enough for me. I'd rather not have to wait until the end of a game before it stops being tedious to play, especially when it's a game that's not exactly short.

I gave up early on the first BotW for several reasons, but largely this one. Unless they toned down the constant break+replace annoyance by quite a bit, I'll be staying clear of this game as well.

You can try playing the Oath to Order without all four temples done, but if you do this, an alternate cutscene where the 1-3 giant(s) you did save show up and attempt to stop the moon but fail, which leaves you with nothing you can do but to just Song of Time outta there as before. If you neglect to do this, another alternate cutscene of the moon crashing into Termina plays, with just an added scene of the giant(s) being overcome by the moon before everything gets destroyed as normal.

In short, aside from glitch abuse you cannot progress beyond the Skull Kid encounter without doing all the temples. It's not really so much a "fight" against the Skull Kid anyway, because nothing you can do to him affects him and he doesn't fight back either -- but he's also not the final boss
