I could understand not wanting to watch Buffy(I got bored on my rewatch midway through season 2), but you'd be doing yourself a disservice by not watching The Sopranos, it's really good. And I don't know if it's already been mentioned, but I gotta recommend Umbrella Academy. I just finished up the second season(third hasn't dropped yet), and I was impressed by how good it is.
