You can, but it's more of a hacky workaround than officially supported. And you're still somewhat limited in which ones you can use.

PS5 still has limits on which ones you can use, but it's based on performance rather than a whitelist. PS3 and PS4 were "literally any SATA drive that can physically fit. Or even ones that can't, if you use an extension cable of some kind and put the drive outside the console". (Actually I think there was an upper size limit - I have a feeling it was 2TB for PS3 and 4TB for PS4 - but that's again about specs, not specific individual devices.)

Generally speaking, as long as it's Gen 4 it'll work. Digital Foundry tested a Gen 4 that didn't even meet the spec requirements and it actually was slightly FASTER than internal storage.
