nothing in them

even if you have like, a single piece of meat left in the middle of the pan just burning away, the rest of the pan doesn't turn black

only when there's nothing in it

i've never done it, myself, but i was just watching some stupid ass infomercial on tv for some "industrial state-of-the-art mini steam cleaner" thing that showed the device getting rid of that burn somehow.
