Since the mind is essentially entirely uploaded, feelings and everything, can't they just keep like a download of it and upload the mind back to the person?

Sure they could've written it that way but that basically kills any sense of tension the movie has.

Not to mention the fact that the movie makes a point of separating your mind from the illusions of the Matrix to gain superpowers, but the illusion of death is apparently still too strong.

The actual reasoning is probably that the plugs have a feature where they electrocute the person's body in the real world if they die in the Matrix to prevent them from waking up and seeing the real world.

I thought it was like a constant upload. Like playing an online game. That would boot you off the server if you died.
