For example:
I enjoyed 2D platformers growing up. Mega Man 2 and 3 are among my favorites and heck SotN may be my favorite.
I still like the genre. Castle in the Darkness, Spelunky, Super Meat Boy are just a few of the newer games that I adore.

Platformers are awesome.

But I just never could get into Shovel Knight, one of the most renowned 2D platformers of it's time.
1.4 hours in 2 years and I have no real explanation as to why. I think it has something to do with progression and controls but IDK. I've even gone back to the game twice to try and ignite the spark, including last week but It's just not happening.

What are your games that you should have loved on paper but it just never clicked.

Dear Esther

Those first-person exploration indie games are one of my favorite newer trends in gaming. Gone Home, Unfinished Swan, Edith Finch, The Stanley Parable, and The Vanishing of Ethan Carter are all among my favorite games

Dear Esther is basically the game that popularized that genre, and yet I just found it so, so boring

Xenogears

I played Xenosaga and loved I, hated II, and loved (most) of III. All I had heard about for 10-15 years was this was amazing. Almost like CT in just the level of "OHMYGAWDHYPE." Maybe because it was a tremendous breakthrough title or something. I finally got to it a couple of years ago.

What it ended up being was "an experience." Outside of the battle systems, Elly and Citan, none of the story or characters interested me. They built a big world/universe, but I never felt they got around to explaining it. Some of the levels drove me insane (Sewers, Tower, Final Dungeon), the dumbass platforming mech stuff, all the random encounters that stopped the characters dead on the map (OOPS DROP OFF A CLIFF). By the time the Disc 2 situation happened, I was actually happy. It means things were quickly wrapping up.

I get why people love it. I get why (even if they don't) they consider it a memorable or remarkable "experience." It was just a one and done for me.

Dragon's Dogma comes to mind

The setting, the class system, the lore, the combat and everything about the game looked like something I'd typically enjoy. However it felt like a poor man's mashup of Dark Souls (one of my all-time favorite series in gaming) and Dragon Age:Origins. The combat wasn't nearly as smooth as Dark Souls nor was the story and characters anywhere near as good as DA: Origins.

Dark Arisen did fix some of the issues the game had but you can't completely fix something so broken beyond repair.

I was appalled when SBAllen announced Dragon's Dogma was one of the Top 100 games nominated for the 2015 BGE Contest. At least he had enough sense in him to not give it a place in the bracket.

Deadly Premonition

I love pretty much every survival horror game from the 5th and 6th generations, some of which are extremely clunky or badly produced but carry enough charm with them to be very enjoyable. I also like Twin Peaks and Lynchian, quirky, weird horror stuff. Yet, Deadly Premonition is just so unbelievably unenjoyable to play with driving segments that are like pulling teeth and third-person shooting that's like playing Resident Evil 4 in quicksand. I just could never get into the story because I dreaded actually having to play the actual game again.

How far did you get into Super?

Because I don't really feel like the Atmosphere really starts clicking in that one for a while. Like the ghost ship and especially Maridia (the underwater part of the game) are where it really starts to get awesome for me. Could take or leave most of the game's aesthetic up till that point.

P3 has advantages on P4 in terms of characters, story, scope, and atmosphere. It's just the gameplay that lets it down...at least until P3P fixed everything. I get why P4 is better, but P3 still has something special the other two don't: a morbid fascination with killing shit.

Breath of the Wild.

It's not a bad game to me, it's decent. But I'm not falling in love with it. Which is strange because I typically love Zelda games and open world games like Oblivion. But BotW just didn't click with me. It's a shame too because I actually bought the Season Pass and so aside from MMOs, I've never spent as much money on a single game as I have with BotW.

I have a lot of reverse examples of this - games that I shouldn't like but I just do. But I don't have a lot of examples of games that I should've liked but didn't. Most of the games I don't like, I have pretty solid reasoning behind my distaste, it's not like a "it just didn't click for me" or "I don't know, there's just something not enjoyable about it."

A world where I like more serious stuff. As great as the character interactions are in P4, I never felt they did anything (unless it dealt with Nanako or Dojima). They are better friends snd a better "party", but they never deal with anything outside of their own arcs.

In P3, they space out the character moments throughout the game. I also like the feeling that...shit happens TO them, and they have to deal with it.

I like tragedy more than comedy. P3 IS all about death and bad shit. P4 has the cooking contest, King's Game, and the beauty pageant...and Teddie...

Gotcha. I like P4 more but definitely agree that P3s story and theme are better and just plain epic in scope. Its the actual characters themselves that are hit-or-miss.

Liz, Mitsuru, Shinji, and Aigis are fantastic, but then you have to deal with Ken, Yukari (ugh), and so many uninspired S Links...

Bioshock and Bioshock Infinite

I liked System Shock 2 a ton, but found these games underwhelming and boring. Bioshock Infinite is particularly assinine in its setting. You like blow up some mech bird and half of Columbia then immediately walk to a fair and dance with Elizabeth and none of the citizens acknowledge what is going on. The level design was so streamlined too and just uninteresting I guess. Never bothered me in other games like Half Life but here it is just so bleh

There is also the two major ideas the P3 cast presents.

1. They feel more like mid-20s/early 30s young adults rather than teenagers
2. They aren't all "friends." They just work together, pretty much by force.

As much as the gameplay decisions are weird, it does seem to fit #2's M.O. Why would Mitsuru, Akihiko, or Shinji want to be led around in battle by some dink they just met who they outrank in seniority? They go out of their way to give reasoning to flesh out why the team isn't the most cohesive, but they also feel like characters (even when MARIN KARIN screws things up). But hey, MARIN KARIN does work...sometimes.

Getting back to the topic at hand, I remember Radiata Stories. I know Star Ocean 3 had come out and was..."something," but I enjoyed it a ton. However, Radiata just seemed like a severe letdown on so many levels. Radiata as a city was full of tons of people, and that led to a great core mechanic. The battles were pretty fast and simple, and ZOMG MAIN CHARACTER CHANGES OUTFITS ZOMG! PROGRESS AFTER 20 YEARS!

But...

The main character was a doofus (because of course)
Crappy animation (Then again, SO3 wasn't great either)
The supporting cast never felt substantial (why can't Gerald and Elwen be there instead of Ridley and Ganz?)
The stupid whimsy (Atelier wasn't in my life at that point)
2D overworld (Star Ocean was in 3D, why wasn't this?)
Choosing sides in the plot amounted to less than expected (in fact, without Radiata, the game kinda dies)
The final bosses and endings on both sides fall flat (Because they were the exact same, except certain character deaths)

Radiata is great for being a dumbass, slice of life waste of time whimsical RPG. But SO3, for its faults, had a level of scope and ambition (brought down by its shitty plot twist). It's like they decided to make a shitty version of something the Atelier series can do better sleepwalking.
