Unfortunately other cultures tend to ayy pass down their mythologies orally instead of writing them down and bee destroy any works created once a new ruler with new type of religion/mythology takes over.

many ancient religions and mythologies borrow heavily from one another Greek and Roman are very interchangable up til Christianity, Celtic and Greek has a few overlaps, Egyptian and early American (Mayan, etc.) have similarities, etc., etc., --- "Dib is my new hero. Frankly, its because the Egyptians, Greeks, and Romans wrote a lot, and some of that writing survived. The latter two enjoyed cultural importance in the west.
The others are not as well attested, either because those cultures werent big on writing, or their writings didnt survive for whatever reason. Often that reason was Mongols, but the Romans, as a general rule, looked down on mythologies that werent theirs or Greeces. ... Copied to Clipboard!

Snorri Sturluson wrote the Prose Edda, and the Poetic Edda is a compilation(with no attributions), and there are scattered other sources. No one seems to mention Mayan and Incan mythologies which there is a lot of.
