Wikipedia says "Recipes vary from the traditional brine solution for pickles, to other solutions, which can impart a sweet or spicy taste."

I know you can put hard boiled eggs in the juice from pickled beets.

I know you can put hard boiled eggs in the juice from pickled beets.

That's what my family always used to do. My mom loved beets, and my dad loved pickled eggs, so she'd eat the beets, and then he'd use the leftover juice to make his eggs.
