Rembrant gouda. Same treatement. Its got more age and tast halfway between a gouda and a parmasean. That with cracker and apple or the aged gouda and a nice smoke ed ham chunk

I put it on top of salads, I use it as a pizza topping w/ tomato (and usually also pineapple), I make teriyaki salmon wraps with it...
I've sprinkled it on burgers when I don't have sliced cheese. It tastes better, but the slice of cheese is usually easier to manage in a burger.

Don't really eat cheese plain. I'll eat cheddar on crackers or in mac & cheese, provolone on sandwiches, and mozzarella on pizza and the like, but that's about it.

Oh, and I'll eat American cheese or occasionally a slice of Swiss on a burger.

Mozzerella of course, and honestly a good mozz on a pizza is the best way to ever eat it, as the sauce etc adds to the flavor. It's good melted with a meat sauce though, so lasagna works great, or a good meatball sub.

I can, and do, eat it unmelted though, but I prefer whole milk mozz which is hard to find on the west coast.

Yup, it's typically bechamel sauce , but people make a mistake adding too much of it then the lasagna tastes like pasta and flour . In this dish "less is more "

I can't pick, honestly. The person who said baked brie had a good one.

My world changed going from the prepackaged blocks of cheap cheese they sell near the yogurt and milk, and into the fancier stuff in the actual cheese section(at my local store there is a cheese counter with stuff).

UK/Irish cheddars
I don't know if I'm being stupid but the brand Sartori has some cheeses without actual names? very good.
Limberger(this one is generally not eaten plain. I make it into a sandwich. Pumpernickel bread and mustard)
Damn, I can't even remember them all. I'm fine with just crackers or hell even eating them plain.

I also had this one cheese once called "bread cheese" or something, and it reminded me of mozz sticks, but the part that oozes out and combines with the breading. That was very good.

I rather like Dubliner. It tastes like a cross between Cheddar, Swiss and Parmesan.

And I'll never pass up a Jarlsberg.

And I had a really good Manchego the other day.

Sometimes I'll just have some chvre, dried cranberries and smoked almonds with crackers as a meal.

I hate riccota aad never use it on my lasagna. I also don't like white sauces. I use a layer of parmesian instead (just a light sprinkling mind you), and of course a really good bolgonese sauce.

I also have a mid layer of moz and of course the moz on top of the lasagna.

It's so good.....people used to eat till they couldn't move.
