can't remember where I left off but the characters were much order and the story was in the perspective of a Ghoul hunting team and one of the characters is a girl that looks like a guy. she has short messy white hair and red tattoos on her body.

I never watched the anime but I read the manga up until MC's hair turns white and he decides not to come back to the cafe

It was signaling a hard turn into Shonen battle focus with the stuff like "I'll break half of the bones in your body" and what I liked about the series was him exploring human-ghoul relations. What defined early Tokyo Ghoul to me was that the climax of arcs was really when characters found the strength to reject violence rather than indulge in it or believe it inevitable.

This had been established for a little bit before where I stopped. I'm pretty sure it's a guy that looks like a girl though, at least in the manga...

The anime is trash and skips a lot. Read the manga. Listen to the first OP though. Unravel is excellent.
