It not just tasted good, it had summer veggies and just felt good. It simmered for more than an hour. The basic recipe was andalusian fish stew.

Olive oil and onion base +garlic with 3/2 times the olive oil and I used a Spanish olive oil. Paprika, saffron, star anise, fresh thyme, 2 seeded habanero peppers, a cup of fresh diced black grapes added to the base along with wine and brandy.

Diced in radishes, celery, roma tomatoes, curly kale, multicolor baby potatoes, whiting filets (haka). Poured in a quart of Aneto fish broth.

Let the potatoes cook.

Added flounder cut 1" x 1". I was being cautious so it took a long time to reach a simmer again.

5 minutes before serving added chopped swiss chard which gave a nice crunch.
