Hard to say what my all time favorite was. I pumped a ton of quarters into the original Gauntlet as a kid, and the old 4 player TMNT and 6 player Xmen game when I was a few years older. In my teens, Mortal Kombat 2 and 3 and Killer Instinct sucked up a ton of my quarters. Nostalgia would dictate that I go with Gauntlet, but I have much more vivid memories of playing MK3 and KI.
