Speaking from experience in working in a restaurant, I'd hate to have so much spanersity on a menu. Keep it simple, especially if you're a "mom and pop" restaurant. You don't want to have to keep so many different ingredients for a variety of dishes. You'll hemorrhage money if you do. Know the locals and the area. Review restaurants in the area and science the shit out it so you know what works and what type of food isn't being offered. Don't make it complicated.
