1) Observation. Look at the things the local wildlife eat and avoid, and then try it out yourself.
2) Trial and error. Learning by what happens to someone else. Oh, uncle Thar keeled over from those mushrooms. Better not eat those.
3) Desperation. Necessity is the mother of all invention. And when pushed to starvation, people will try a lot of different things to fill their stomachs.
