I'm assuming you mean that between the two I'll only be able to have one, and not that whatever I choose will be the only type of food I ever eat, right?

Cheese. There are plenty of options to substitute for bacon, but no options to substitute for cheese.
Hard? That's pretty easy, since I usually ask to have cheese removed from what I'm eating. Granted, it's also unfair since cheese makes up an absurd amount of products whereas bacon isn't as widely used.

I also choose cheese. My reasoning is while there are many different types of bacon, there are many more types of cheese. Bacon, even with different flavors, tend to also taste similar. While different types Cheese can have many more flavors. Also, way more recipes and types of food consist of cheese. Meaning a lot of those products wouldn't exist for me. Or would taste absolutely terrible.
Between the two cheese seems to be the obvious choice. I know some people who are lactose intolerant who like cheese. And just can't eat it much.
Granted, there will be people who just don't like cheese, or who don't think it worth it if they are lactose intolerant. And there will also be people who don't eat bacon because they don't eat pork. For religious reasons or other. Vegetarians would probably choose cheese over bacon(I would hope). And I guess vegans can't really vote on it...

Cheese is far more integrated into cuisine of various cultures, where as bacon's usage is more limited. And by itself I find bacon to be rather overrated.
And while it doesn't change my opinion, there probably should be clarification on how you define cheese and bacon. If cheese is specifically referencing to milk derived products vegan "cheese" can do an okay approximation of the flavor of certain cheeses. Due to the breadth of cheese varieties this approximation would be suboptimal, though.
And as far as bacon goes, are we specifically talking about cured and smoked pork meat, or a more general definition? Among various things called bacon, there are certain meats that are similar enough to bacon that eliminating bacon itself isn't really that big of a loss.

Because you're not considering all the implications of cutting out cheese. I suspect a lot of people voting bacon are thinking along the lines of "oh, guess I can't put cheese on my sandwiches anymore." Cutting out cheese is a bit worse than that, though.
