Yeah, but still too much fat is not good imo. I bought a standing rib roast that sadly had a huge fat deposit hidden inside as in 3/5 of the whole roast was just fat. It was extremely disappointing, so I am a bit leery of excess fat.Okay

I recently had a ribeye from Bavette's in Vegas, best ribeye I ever had in my life by a long shot. My wife got the fillet which was even more expensive and it didn't compare. It was a damn good piece of fillet too.In general, it cant. Beef tenderloin, which the filet is cut from, typically has little to no marbling, while ribeye has the most. Ribeye is the king of conventional steaks, though many would argue that a properly sliced, properly cooked picanha beats it, as picanha has similar marbling to a ribeye while having a similar tenderness to a filet.
picanha is the best for sureHavent cooked one yet as I dont think you can get them around here, and ordering a whole one from online vendors is pricey. I suppose I should just pony up at some point.

If your local butcher or store sells top sirloin then they have picahna but cut bigger steaks that have that as part of them. Make friends with them and theyll probably be willing to get you one from time to time.I know its the same cut, but I want the whole one. Im leaning more and more toward just buying subprimal cuts and cutting my own steaks anyway. All I really have is a grocery store butcher, and they arent exactly getting good quality meat to start with to be honest.
I feel that, Im just saying if you build a relationship with your grocery story butcher then theyll probably be willing to get you a picanha and cut them steaks without it just this once.Cool.
