One of the reasons I loved FFX was a lot of the boss fights felt like puzzles you had to solve rather than straight up stat checks.

I hated that fight. It was fun maybe the first time but replays nah hates it.

I feel like a lot of Zelda boss fights are like this

Most boss battles in the Metroid Prime games are like that.

I thought when you said "varied" you meant like different phases all play differently. Like K Rool in DK64:

Phase 1: Dodge his attacks and shoot yourself out of a barrel at him
Phase 2: Fly up using a jetpack and shoot down the stage lights on his head
Phase 3: Punch buttons outside of the arena, place banana peels and play a trombone
Phase 4: Shrink down, go in a hole in his shoes and beat up up his toes
Phase 5: Grow to enormous size and falcon punch him
