It was not really clear to me from the books/movies what like...I could do given the one ring besides be invisible.

They don't. The whole point of the ring is that it makes you believe you can take Sauron's power for your own but you just die and now Sauron is back.

It was his "plan B" in case he was killed.

The ring doesn't actually do anything for Sauron. It's his "lich phylactery" basically. The entire magic of the rings is to make it so that somehow, someone, will get the One Ring and bring it back to where Sauron can be revived.
