There's definitely ways to make the game easier. I just thinking they mean a mode of game where you innately do more damage, can take more hits, enemies are slower/dumber, etc.
To be fair, there are bits of the Souls games where Miyazaki and co are being deliberately unfair. Some of those traps can be brutal.
