I like both a lot but I wish pho restaurants got more creative with it like ramen restaurants do. Pho options are generally prepared one of maybe a dozen different ways. Ramen styles are constantly evolving.
I just looked it up and I guess pho in Vietnam can vary pretty drastically depending on the region. Guess the restaurants in America need to step their game up.
If he is spelling it using the specific accent, it's the Southern way. Many Vietnamese refugees escaped Vietnam due to the fall of Saigon, so it makes sense why Vietnamese Europeans and Americans would pronunciate it the Saigon dialect way even though the "Hanoi" dialect is the "official accent". I do know plenty of Pho places near me in Los Angeles that will secretly give non-asians extra broth and noodles if you pronunciate Pho the southern way though.True enough.
