I want ground beef well done in most cases. I am also the type of person that will eat rare steaks. I find the whole lets not cook ground beef thing sketchy unless it is coming from a place I trust to be completely capable of sourcing, handling, processing, and preparing the beef.
In that case you should also be asking for your steaks well done. Many are blade tenderized. The blades push the bacteria from the surface into the steak.
