Boneless wings feel like a sad compromise between chicken wings and chicken nuggets or strips. They aren't bad, I just don't really know why they exist.
However I have had boneless wings once that were just as good as bone-in. I have no idea what that place did, but they don't do it any more-- now their boneless wings are the typical chicken tender-like things that other places haveI've seen a method for deboning wings that seems to be trending. Often they'll stuff the wing after that.
Technically wings are white meat.

Makes me sad that I can't find only flats at my local grocery stores when I do homemade wings. Drumsticks just ain't as good.
wouldnt this technically be more expensive to do because it would require more chickens to get the flats?
Wouldn't they also sell packages with only the drums? It'd still cost more, but that'd be from the extra processing rather than the need for more chickens.
