Boneless wings feel like a sad compromise between chicken wings and chicken nuggets or strips. They aren't bad, I just don't really know why they exist.
People eat wings fast, they don't savor the flavor or anything. Boneless deliver a similar-esque flavor without having to slow down to eat around a bone, increasing the chance you order/eat more wings.
