If you can find a restaurant that makes good Tripe/Intestine tacos I really recommend it with some lemon/lime toasted/crispy. Milanesa tortas are also good. Mexican Seafood is fucking delicious as well, someone mentioned ceviche already, squid/calamari is also amazing.

Being vegan is a fad, of course you can find an academic article that supports plant based eating, you can find an academic article about just anything, and most of them are full of mistakes(I'm not going to read that propoganda to point out it's mistakes). If all you eat is plants you will eventually become malnourished from the caloric deficit. The basic idea driving veganism is that plants are dense in nutrients and low in caloric density, making it an ideal way to fight obesity which explains why it's being pushed on people so much. The problem is that we don't REALLY understand biology as much as we pretend, sure we have pills that make your dick hard and other miraculous things, but from experience working in the fitness industry sometimes people are stuck at certain weight and regardless of dietary changes or activity level changes the weight simply will not come off. I say this with respect to vegans but eating only plants turns you into a pussy, it'll screw up your sex life too. Traditional sources of protein like beef, and the organs of animals have great sexual benefits. You can cling to your .gov sponsored vegan propoganda all you want, I've enjoyed a very good life eating animals AND plants, I'm not trying to become a plant jihadist.
