You're right that it doesn't fit Westworld at all, but that's the point. Aaron Paul's character has been dosed with a drug called "Genre." It makes him start to perceive the world in different movie genres. You see it transition from black and white into color when he switches from the noir genre to the action movie genre. This score just changes the original song (Flight of the Valkyries) to this one, making it a video game genre instead of an action movie one. That kind of thing would actually fit pretty well in the world S3 establishes.
