So the animation style and the characters not being kids are some of what you look for? Maybe you'd like some seinen, since that are geared more towards young men. Attack on Titatn, One Punch Man, Death Note and Cowboy Bebop are all considered seinen.

Actually, Death Note and AOT are shonen. Bebop is anime original.

OPM started out in shonen but moved to seinen later on.
