the final part about smash is kind of silly, but the idea that a fighting game should be at least somewhat accessible is certainly understandable

Accessibility comes from watering down the genre. To keep running with the RPG example, the whole reason the Wasteland 2 Kickstarter did so well is because it's promising to deliver an RPG with the depth and complexity that hardcore RPG fans have wanted for a decade instead of these modern day RPGs that eschew all the complexities in favor of being accessible. There's room for these casual-friendly renditions of a genre because there are people out there who like the basic ideas of a genre but don't want to deal with the complexities of it, but to claim that the complexities are "arbitrary," and that any game that sticks by them is just a "minor re-arrangement of all of the same crap" is laughable.

It's more about memorization and repetition vs. adaptation and reaction. The games test different skillsets.

Fighting games like King of Fighters test all those skill sets more than Smash Bros., so I don't know where you're going with that.
