I've looked over your list and your to watch section and most of it is stuff I'd probably recommend to someone who is looking to build a good base in anime. But if you want more stuff...

Stuff you should like.

One Outs (If you liked shows like Death Note you'll like this.)
Great Teacher Onizuka (I'm surprised no one else has mentioned this already)
Steins;Gate (It takes a few episodes for it to really click you're watching something amazing, but it's worth it.)
Mobile Suit Gundam 00 (I'm not really big on Gundam, but if you're going to watch just one, a lot of people say it should be this one)
Berserk (While the Manga is much more fleshed out the anime is great too.)
Higurashi no Naku Koro ni (Can get a little weird but at times, but is very enjoyable to anyone not squeamish.)

Stuff I like that you might or might not like.

Lucky Star (Has a lot of references to other anime. If anything I'd recommend watching Haruhi Suzumiya first.)
Escaflowne (In terms of world and character building this series leaves nothing. It has a little bit of something for everyone.)
K-On! (If you're going to watch something from the moe wave, watch this. I didn't really know how much I liked it until I was in a bad anime season and an OVA aired and I realized just how much better it was than the stuff airing that season.)
Madoka Magica (Dark story line, amazing music, and fantastic art work.)
Nana (On the melodramatic side, but it has some of the best character development in an anime)
Baka to Test to Shoukanjuu (Like all the episodes involve some sorta cross dressing joke. The jokes do get overused a lot, but somehow they manage to stay fresh and hilarious)
