Yeah I can see that too. But again its a necessary thing that doesn't involve them introducing a new character to travel around with Aang and teach him waterbending.
But I think part of it wasn't that she become a full fledged master overnight, she just mastered the basics enough to be fancy in her "fight' against Pakku. Yeah she got better than it seemed possible, but to me it sounded like she was only a few steps ahead of Aang at any given time and she was still training so that she could train him.
