i dont disagree and tbh i dont even like red meat
i was chef at a steakhouse for a few years and our most popular cut was filet mignon b/c of its "tenderness"
i hate filet
absolutely flavorless garbage cut imo
ribeye is prolly my fav cut, i think strip is easily the most palatable, but porterhouse/t-bone is prolly what to go for if you can afford it
the amount of fatcap left on the meat depends on if they butcher in house or not. i had my own in-house butcher and we trimmed the fatcap down to like 3/8'' iirc
