Every kind from plain presliced, to extra aged NY cheddar, to Wisconsin import. It's a terrible cheese. But sour soap? It's hard to think of a more opposite flavor to cheddar than sour soap. It's sharp and dry. Like, I get people not liking a strong blue cheese, very pungent and acidic. That's what I like about it.
