They use these tiny little 1 oz ramekins full of of an herb oil for bread that you have to wipe out individually because the oil will linger through the dishwasher. Pretty annoying. Also hate the pans and broiler plates that you have to rip at with steel wool because stuff is burned into them. Years ago I knew another sorta eccentric guy named Dishwasher Danny who hitchhiked around and wanted to do dishes in all 50 US states. He talked about working a casino job as the only dishwasher. Said he made great money but it was hell -- he could only do it for a couple weeks and this was a lifelong dishwasher. I'm not sure I would be keen on that.

Some weird pink shit called Noble. Probably cheaper than Dawn. Restaurants gotta save money always, at all times.

Be a long-distance runner. It's very helpful having tons of energy when you've gotta do 11-12k steps per shift, and people don't question how much you're actually doing if they see you moving around quickly and confidently.

No, actually I needed surprisingly little in the way of qualifications. I assume it was because of my winning personality, I don't know if the experience is replicable by another.
